GREEK SALAD SERVED

WITH CHEESEBREAD

(Choriatiki)

Serves 6

INGREDIENTS

For the salad

2 large tomatoes
1 cucumber - 1 medium size onion - 1 green pepper
200 grams of feta DODONI cut in to cubes
10 kalamata Olives- 2 tbsp parsley
1 tbsp capers - 1 tbsp oregano
6 tbsp ALTIS Olive oil - 1 tbsp vinegar
salt and fresh ground pepper

For the Cheesebread

400 grams of dough (which may be purchased from the bakery
2 tbsp Altis Olive Oil - 1 tbsp oregano
200 grams feta DODONI cut in large pieces

DIRECTIONS

Wash the vegetables, cut the tomatoes into slices, the cucumber into slices and the green pepper and the onions into slices. Mix all the ingredients for the salad in salad bowl together with the olives, the fresh cut parsley, the oregano, the capers and the feta DODONI.

Beat the oil, the vinegar, the salt and the pepper and sprinkle in to the salad before it is served.

Open the dough into an oblong shape, brush it with some Altis Olive Oil and add the feta DODONI sprinkled with oregano. Wrap up the dough into the shape of a cylinder. Place the cheesebread into a pan, brushing it with some oil and bake in a pre-heated oven at 300 C for about 20 minutes, until it begins to brown. Serve the salad with slices of the cheesebread.



VARIETY OF FRESH
FRUIT WITH FETA

Serves 6:

INGREDIENTS

600 grams of watermelon
600 grams of melon
600 grams of grapes
6 apples
1 cup of sugar
juice of two lemons
1 cup of water
450 grams of feta DODONI

 

DIRECTIONS 

Wash the grapes and clean the apples, the melon and the watermelon. Cut the watermelon and the melon into small pieces and the apples in slices.

Mix the sugar with the water and the lemon and leave for 15 minutes, until the sugar melts.

Arrange the fruit on a large platter and sprinkle the sugar mixture over the watermelon, melon and the apples.

Serve the fresh fruit with feta cheese DODONI.
